Lemon Avocado Dip

  • ripe avocado, halved, seeded, and peeled
  •  tablespoon lemon juice
  •  1/2 cup light sour cream
  •  clove garlic, minced
  •  1/8 teaspoon salt
  •  Lemon wedge (optional)
  •  medium red, yellow, and/or green sweet peppers, seeded and cut into strips

In a medium bowl, use a fork to mash avocado with lemon juice. Stir in sour cream, garlic, and salt. If desired, garnish with a lemon wedge. Serve with pepper strips.

Make ahead tip:  Prepare as directed. Cover surface of dip with plastic wrap; chill for up to 4 hours.
