Grilled Sweet Potatoes

1 large sweet potato, halved lengthwise
1 tbsp butter, softened
salt, to taste
pepper, to taste

Cut two pieces of heavy duty foil, about 18 X 12 inches; place a potato half onto each piece of foil.
Spread cut side with butter and sprinkle with salt and pepper.
Fold foil over potatoes and seal tightly.
Grill covered, over medium hot heat for 50 minutes, or until tender, turning once.
To serve, fluff potatoes with a fork and top with a drizzle or honey or a sprinkling of brown sugar or cinnamon.

*Potatoes can also be baked in a 400° oven for approximately 45 minutes
