Minted Pineapple Cooler

1 medium fresh pineapple, peeled, cored, finely chopped (about 3 cups)
2 cups water
1/2 cup sugar
1/4 cup fresh mint leaves
2 tablespoons lime juice

Place pineapple in medium sauce pan.  Add water and sugar.  Heat to boiling; reduce heat and simmer, covered, 15 minutes. Stir in mint.  Let stand, covered, about 1 hour or until cool.  Strain; discard mint leaves and reserve pineapple for another use. Stir lime juice into pineapple liquid.  Refrigerated until chilled.  Serve over ice cubes.  Add sugar and stir until dissolved just before serving.

Makes 4 servings

Tip:  Reserved pineapple makes a delicious topping for ice cream or pound cake.
