Melon Soup

It’s the season when we want to eat lightly and not spend hours in the kitchen preparing food. Fruits and vegetables are at their best this time of year and even though it may not seem like soup weather, we’re sure you’re going to love this cool, refreshing, delicious, Melon Soup! It’s the perfect starter for an easy summer lunch or dinner (or, you can even serve it for dessert with some vanilla ice cream on the side!)

1 small very ripe cantaloupe, peeled, seeded, cubed
1-2 tbsp lemon juice
1/2 very ripe honeydew melon, peeled, seeded, cubed
2-3 tbsp lime juice
1 1/2 tsp chopped fresh mint leaves
Fat-free sour cream

Process cantaloupe and lemon juice in a food processor or blender until very smooth; pour into medium bowl.  Process honeydew and lime juice in a food processor or blender until very smooth; pour into a medium bowl.  Refrigerate both mixtures, covered, for several hours or overnight.  Using 2 ladles, pour equal amounts of both soups at the same time into chilled bowls; garnish with mint & sour cream.  Makes 6 servings.
