Beef, Vegetable and Egg Scramble

1 1/2 pounds lean ground beef
2 small onions, finely chopped
2 cloves garlic, minced
1/2 pound mushrooms, finely chopped
1 teaspoon dried oregano leaves
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg
1 package (10 ounces) frozen chopped spinach, thawed, well drained
4 eggs, lightly beaten
salt, to taste

Cook ground beef in large skillet over medium-high heat until browned, about 5 minutes, crumbling finely with a fork.  Add onion, garlic, and mushrooms; cook over medium heat, stirring occasionally, until onions are soft, about 5 minutes.  Stir in oregano, pepper, nutmeg and spinach; cook about 3 minutes longer.  Add eggs; stir mixture over low heat just until eggs begin to set, about 2 minutes.  Season to taste with salt.

Makes 6 servings.
