Ingredients:
- 2 cups spring mix
- 1/4 cup cucumber chopped
- 1/4 cup yellow bell pepper chopped
- 1/4 cup tomatoes chopped
- 1/4 cup carrots shredded
- 28 grams black beans drained & rinsed
- 1 tablespoon walnuts chopped
- 1 tablespoon cheddar
- 1 tablespoon ranch dressing
- 1 egg cooked and sliced
Instructions:
- Combine all ingredients except egg in a large bowl and mix until well combined.
- Top with egg slices & enjoy!
