Blueberry & Cucumber Yogurt Parfait


  • 3/4 cup plain low-fat Greek yogurt 
  • 1/4 medium cucumber, diced 
  • 1/2 cup blueberries
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon maple syrup or honey 
  • Fresh mint for garnish (optional)


1. Add yogurt, cucumber, and blueberries to a serving glass cup or mason jar. Drizzle maple syrup and sprinkle ground cinnamon. Garnish with mint leaves. 

2. Serve cold as a snack or dessert.
